we Japanese normally make Miso paste with soy beans. in this video I made Miso paste with chickpeas. Chickpeas are more popular than soy beans in Europe. I hope this is good for you.
Miso is usually made in winter to avoid mold. It is then fermented for 6 months or more.
I made in summer, that is why fermentation was boosted and able to eat after 5 months.
Making Miso is quite simple if you can get Koji.
