Bahan :
120gr Gula Pasir
120gr Heavy cream / Whipping cream
6 sdm Air.
20gr Unsalted Butter
1/2 sdt Garam
Campurkan gula pasir dan air.
panaskan gula pasir di api kecil, jangan diaduk cukup pancinya sedikit di putar-putar.
Masak sampai gula kuning kecoklatan (jangan sampai gosong) .
Matikan api
Masukan butter terus diaduk.
Masukkan cream aduk cepat agar tidak menggumpal seperti ini, kalau menggumpal nyalakan api kecil beberapa detik sambil terus diaduk lalu matikan api.
Masukan garam.
Dinginkan, saat dingin akan lebih mengental, tuang ke jar tutup rapat simpan di kulkas, bisa tahan 1 bulan.
Ingradients :
120gr Granulated sugar
120gr Heavy cream / all purpose cream.
6tbsp Water
20gr unsalted Butter
1/2 tsp Sea Salt.
Mix granulated sugar with water
Heat sugar in low heat, don't stir with spoon, just stir the pan.
Let the mixture continue boiling until it turns an amber color. (Be careful not to burn it)
Turn off the heat.
Mix in butter, vigorously whisk
Pour in cream, keep stir it or it will be harden, if it harden bring back to low heat for few seconds while keep stiring, turn off the heat.
Add sea salt.
Let it cold, caramel thicken as it cools. Keep in jar cover tightly. Store in refrigerator for up to 1 month.
