The Harpers' Escape Monday Play-Along folks contributed to this holiday greeting.
Tracy’s Cranberry Cake
1 cup raw cranberries
1/4 cup sugar
3/4 cup chopped walnuts.
Batter:
1 egg
1/3 cup sugar
1/4 cup melted butter
2 tbsp oil
1/2 cup flour
Grease a pie pan. Spread cranberries in the pie pan to cover the bottom. Sprinkle with sugar and nuts.
Batter: Beat egg and gradually add sugar. Add butter and oil and mix. Add flour and mix.
Pour over cranberries.
Bake at 325 for 40 minutes.
