Pineapple bun is one of the most popular and classic buns in Taiwan bakeries. It is basically a soft and fluffy milk bun topped with a cookie layer. There’s actually no pineapple involved in this recipe. These are called pineapple buns because the top cookie layer somewhat resembles the the pattern on a pineapple.

無鹽奶油 unsalted butter 55g

速發酵母 instant yeast 5g
菠蘿皮材料 Cookie top layer ingredients:
全脂奶粉 milk powder 20g
糖粉 icing sugar 110g
全蛋液 egg 70g
無鹽奶油 unsalted butter 120g
高筋麵粉 bread flour 240g
奶酥餡材料 Custard filling:
無鹽奶油 butter 150g
奶粉 milk powder 150g
糖 sugar 120g
全蛋液 egg20g
鹽 salt 1/4 tsp
