⭐ Ingredients
For Nihari
• Mutton (with bones) — 1 kg
• Oil — ½ cup
• Fennel seeds — 1 tbsp
• Kashmiri red chilli powder — 1 tbsp
• Nihari masala — 2–3 tbsp (store-bought or homemade)
• Fenugreek 1tbsp
• Onions — 2 medium, sliced
• Flour (for thickening) — 2 tbsp, mixed in water
• Salt — to taste
• Water — as needed
For Garnish
• Fresh coriander — chopped
• Ginger slices
• Lemon wedges
• Green chillies sliced
1️⃣ Heat Oil
Heat ½ cup oil in a heavy pot.
2️⃣ Add Mutton
Add mutton pieces and fry for 8–10 minutes until slightly browned.
3️⃣ Add Spices
• Fennel seeds
• Kashmiri red chilli
• Nihari masala
• Salt
Mix well and fry for 3–4 minutes.
4️⃣ Add Water & Slow Cook
Add enough water to cover the mutton.
Cover and slow cook for 2–3 hours until meat is tender.
(Pressure cooker: 35–40 minutes)
5️⃣ Add Water & Slow Cook
Add enough water to cover the mutton.
Cover and slow cook for 2–3 hours until meat is tender.
(Pressure cooker: 35–40 minutes)
5️⃣ Add Flour Slurry
Mix flour with a little water → make smooth slurry.
Add into the pot while stirring.
Cook for 15–20 minutes until gravy becomes smooth and thick.
6️⃣ Add Onions
Add oil in pan sliced onions and red kashmiri chilli power sauté until soft and light golden brown then pour in the nihari.
7️⃣ Simmer
Let Nihari simmer on very low flame for 30 minutes for deep flavour.
🍋 Serve
Serve hot with:
• Ginger julienne
• Fresh coriander
• Sliced green chillies
• Lemon wedges
• Naan or kulcha
