Hey there, welcome back! Its great to have you join us for our Christmas tradition, Welsh Fruit & Tea Loaf. We have this several times during the season and as soon as the weather turns chilly, our taste buds start craving this spicy, fruity flavor. The special ingredient is tea, and you can imagine that there are many different flavorful teas you can use to experiment with, the possibilities are endless!

Bara Brith
Ingredients:
· 14 oz. dried mix fruit (raisins, figs, sultanas)
· 10 oz. strong hot tea (3-4 tea bags)
· 9 oz. self-rising flour
· 1 teaspoon mixed spice (**If you are unable to find this ingredient, there are many websites that have the recipe to make your own.)
· 4 oz. brown sugar
· 1 beaten egg
Steps:
· Soak fruit in a bowl with tea. I used a spiced chai for this cake. While tea is still warm, mix in brown sugar and spice and stir till dissolved. Leave the fruit to soak for 6 hours or overnight.
· After fruit has soaked for the recommended time, stir in the self-rising flour and beaten egg. Blend well together.
· Preheat the oven to 350 degrees. Spread butter in a tin loaf pan and line the side with parchment paper. This step is optional if you butter the pan thoroughly for the cake to come out. However, I lined the bottom and the front and back with one strip of parchment to help me take it out easier.
· Bake for approximately 45 mins or until the cake has risen and cooked through. The top should be a dark brown. Feel free to insert a bamboo skewer into the cake to make sure the batter is cooked thoroughly. When pulling the skewer out, if there is wet batter on the end, then you will have to leave it in longer.
· When done, leave to cool on a rack for 30 to 60 mins to cool. Store the cake in the refrigerator in plastic film for a day before eating. This makes the loaf set and dense. It can be reheated and eaten with melted butter.
Note: You can dust this with powdered sugar, decorate with icing or whatever you prefer. We like it simple and without any topping the best.
