I have been vegan for about 10 years and I prefer making anything from scratch that I am capable of cooking. I have tried many plant based recipes for mock meats and plant based cheeses, always trying to perfect them as I go. The ham press applies just enough pressure to seitan meats while they cook, that the texture is much better. No holes and no bread-like texture. I made the 86eats recipe for turk*y breast deli meat and it was absolutely perfect. I also made a working bologni recipe that was much improved after slicing, freezing, then thawing. This is not perfect, but it is what I experienced trying to make plant based deli meat.
