Temperature is always problem number one in tempeh production, even for Indonesian tempeh producers. Sometimes the weather will cause the temperature to drop significantly and the tempeh production will fail.
Using an incubator to control the temperature has some problems too: overheating.
Overheating is exposing your tempeh to a temperature of over 90F for an extended period, like an hour or so. The extended heat will burn the mycelium, ruin the fermentation, and fail the tempeh. It is true that the temperature controller will take care of the temperature. But, it is not the whole truth.
