Recipe
Peri-Peri Chicken 🍗
Ingredients:
• 2 chicken thighs
• Salt and pepper to taste
• 1-2 fresh red chilies (adjust according to heat preference), finely chopped
• 2 garlic cloves, minced
• 1/2 tablespoon paprika
• 1/2 teaspoon ground cumin
• 1/2 teaspoon ground coriander
• 1 tablespoon lemon juice (freshly squeezed)
• 1 tablespoon plain yogurt
• 1 teaspoon honey or brown sugar
• 1/2 teaspoon dried oregano (optional)
• 1 tablespoon fresh cilantro (optional)
• peri peri sauce (optional)
Instructions:
1. Marinate the Chicken:
• In a small bowl, combine the chopped red chilies, minced garlic, paprika, cumin, coriander, lemon juice, yogurt, honey, olive oil, salt, and oregano (if using). Stir until well-mixed.
• Place the chicken thighs in a bowl or resealable bag. Pour the mixture over the chicken, rubbing it in to coat all sides evenly. Cover and refrigerate for at least 1 hour, or ideally overnight, for maximum flavor.
2. Cooking the Chicken:
• Preheat your oven to 200°C (400°F), or grill the chicken on medium heat.
• Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Sear the chicken for about 4-5 minutes on each side until golden brown.
3. Smoking (for tandoori Flavor):
• Heat a piece of coal on an open flame or gas burner until it turns red hot.
• Place the hot coal in a small metal bowl or foil, and set it inside the dish with the chicken.
• Drizzle a little oil over the coal, which will create smoke. Cover the dish tightly to trap the smoke and infuse the chicken with a smoky aroma for about 10 minutes.
4. Serve:
Garnish with fresh cilantro and serve with your favorite sides.
