Ingredients:
Fusilli or Penne pasta: 160-180gms
Water: 1.25 ltrs
Garlic : 15gms
Onion : 50gms
Tomatoes: 100gms
Extra Virgin Olive Oil : 4 tbsps
Ketchup : 4 tbps
Italian Seasoning: 1 tsp
Red Chilli flakes: 1 tsp
Salt : 1/4 tsp
Hey guys, welcome back to D'Nutty Grains...I have never been a huge fan of white sauce pasta, which made me switch over to Red Sauce Pasta..So, if you are someone like me, or lactose intolerant, then this pasta is a must try...
Before we start boiling our pasta, let us prepare the ingredients for our sauce...Here, i have taken about 15gms of peeled garlic cloves, 50 gms of onion, i.e., a small size onion; 100gms, that's 2 medium sized tomatoes... My son doesnt prefer chopped garlic of tomato skin in his pasta, so i have started grating all of these...Grating garlic and onion is very simple....For tomatoes, you have to grate them like this, so we only get its pulp, not the skin...If you don't like seeds, you may take those out, before grating...Now, our sauce ingredients are ready, let's boil our pasta...
Take 1.25 ltrs of water in a large pot, and let it become boiling hot. Then add 1 tsp of salt and 160-180 gms of pasta: fusilli or penne, as per your preference, and let it boil on a medium high flame for about 8-10mins. Move the pasta using a fork, every 2-3mins, so it doesnt get stuck to the bottom of the pan... Once it starts looking soft, like this, turn of the gas, and transfer it to a colander, draining off the hot water...Rinse off the pasta, with some water, to cool it down, so it doesnt get overcooked while we prepare our sauce..
Take a large wok or a pan, add 4 tbsps of extra virgin olive oil...let it become warm, before adding grated onions...cook them on a medium flame for about 30secs...then add garlic, let it cook for another 30-40secs...Finally add the tomatoes, and let it all cook for about 2mins on the medium flame, while stirring intermittenly, to avoid burning and sticking to the pan...After 2mins, lower the flame and add 4 tbsps of tomato sauce, let it cook for another min. Now add 1/4 tsp of salt, 1 tsp of italian seasoning, 1 tsp of red chilli flakes...Mix them all well for 30 secs...then add pasta...mix it gently with the sauce until the entire pasta is well covered with it...Cover and let it cook for a minute on a low flame, so the flavours get well absorbed in the pasta...After 1 minute, remove the lid, and the pasta is ready to be served....
