Almond Pate Sucree:
Butter: 180g or 12.5 tbsp
Confection sugar: 127g or 3/4 cup
Eggs: 50g or 1 large
Yolks: 18g or 1 large
Salt: 2g or 1/2 tsp
AP flour: 196g or 1 1/4 cup
Almond flour: 200g or 2 cups
Almond Cream:
Confection sugar: 100g or 3/4 cup
Almond flour: 100g or 1 cup
Butter: 100g or 7.5 tbsp
Eggs: 100g or 2 eggs
Mango Cremeux:
Mango puree: 287g or 1 1/2 cup
Eggs: 118g or 2 eggs & 1 yolk
Sugar: 100g or 1/2 cup
Gelatin: 7g or 3 sheets
White chocolate: 56g or 1/4 cup
Pastry Cream:
Milk: 250g or 1 cup
Vanilla paste: 4g or 1 teaspoon
Sugar: 65g or 1/3 cup
Cornstarch: 15g or 2 tablespoons
Egg yolks: 54g or 3 large
