Cambodian Noodle aka Kuy Teav

Cambodian Noodle Soup ( Kuy teav).
Ingredients for the soup:
Stovetop: I use 18 quarts pot size
10 quarts water.
1 salted preserved daikon.
1/3 cup dried shrimp.
3 pieces celery.
👉 Fire roast :
1 small Chinese daikon.
1 carrot.
1 piece ginger.
1 yellow onion.
1 bulb garlic.
Wash to remove burnt particles.
👉Add:
3 tbsp chicken bouillon powder.
3 tbsp fish sauce.
1 tsp white pepper.
1 tsp msg optional.
1/4 cup rock sugar.
31/2 lbs beef neck bone.
1 slab beef ribs.
2 bags of beef meat balls.
Fill the pot with water and cook for 2-3 hours or until meat is nice and tender.
Taste and adjust.
-Fresh rice noodle.
👉Condiments:
-Green onion, onion, herbs and bean sprouts.
Fried garlic, chili oil, sriracha, hoisin sauce, black pepper, soy sauce or your favorite.
