Ever wonder what happens when you combine Indian corn, oats, malted barley, and sorghum in a still? In this video, I'll demonstrate the process of crafting a unique spirit using this diverse grain bill. We'll cover:

Grain preparation and milling
Mashing and conversion of starches to sugars
Fermentation with carefully selected yeast
Distillation techniques to refine and concentrate the alcohol Discover the distinct characteristics each grain imparts to the final product.

A Brief History of Indian Corn

Indian corn, also known as flint corn or maize, boasts a rich history that intertwines with the story of Native Americans and their agricultural practices. Originating in Mesoamerica thousands of years ago, corn was domesticated from a wild grass called teosinte. Through careful cultivation and selective breeding, indigenous peoples developed a staple crop that would become essential to their diets and cultures.

The cultivation of corn spread northward from its origins in Mexico, reaching the southwestern United States around 4,000 years ago. As Native American tribes migrated and traded, corn cultivation expanded across the continent, adapting to diverse climates and environments. By the time European explorers arrived in the Americas, corn was a cornerstone of many Native American societies, playing a vital role in their agriculture, ceremonies, and daily life.

The arrival of Europeans in the Americas marked a significant turning point in the history of corn. Introduced to Europeans by Christopher Columbus, corn quickly spread across the Atlantic, becoming a valuable crop in Europe, Africa, and Asia. Its adaptability and high yields made it an important food source for growing populations around the world.

Today, corn remains one of the world's most important crops, with countless varieties cultivated for various purposes. From food and animal feed to industrial uses like ethanol production, corn plays a crucial role in the global economy. The legacy of Native American farmers and their deep understanding of corn cultivation continues to shape modern agriculture.

The story of Indian corn is a testament to the ingenuity and agricultural expertise of Native Americans. Their careful domestication and cultivation of this remarkable plant have had a lasting impact on the world, shaping diets, economies, and cultures across continents. As we continue to rely on corn for sustenance and various industries, it is important to acknowledge and honor the indigenous peoples who first cultivated this essential crop.

A Brief History of Sorghum

Sorghum, a versatile and drought-tolerant grain, has a long and fascinating history that stretches back thousands of years. Originating in northeastern Africa, likely in the region of present-day Sudan and Ethiopia, sorghum was domesticated around 8,000 BCE. Archaeological evidence from Nabta Playa, near the Egyptian-Sudanese border, provides some of the earliest known records of sorghum cultivation.

From its origins in Africa, sorghum spread throughout the continent, adapting to a wide range of environments, from the highlands of Ethiopia to the semi-arid Sahel. The movement of various tribal groups within Africa played a significant role in the dispersal and diversification of sorghum varieties. This adaptability made it a crucial crop in regions with challenging climates.

Over time, sorghum's cultivation extended beyond Africa, traveling along trade routes like the Silk Road. It reached the Middle East, India, and eventually China, where it became an important part of local agricultural systems. Historical records and writings, including those of Pliny the Elder, confirm the presence of sorghum in the Roman Empire at the beginning of the Christian era.

The introduction of sorghum to the New World occurred during the Age of Exploration. It is believed that sorghum arrived in the Americas through two primary routes: first, with the "great explorers" in the 16th century, and later, via the slave trade from Guinea to the American colonies in the 17th century.

Today, sorghum is cultivated worldwide and remains a vital crop for food security, particularly in arid and semi-arid regions. It is used for various purposes, including human consumption, animal feed, and the production of biofuels. The long history of sorghum highlights its resilience and its importance as a staple crop for diverse cultures across the globe.
