We boil the wort to sanitise it and to extract the bitterness and aroma from the hops. We introduce some equipment such as the hop spider and immersion chiller. We give some tips on planning the timing of the boil part of your brew day and using boil-off to your advantage. There is a nice rolling boil to ensure a hot break.
