Recipe:
Striploin, about 5 lbs/2,3 kg
Salt and pepper
For the sauce:
3-4 tablespoons/50-60g melted butter
1,5 tablespoon honey
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
1 tablespoon fresh thyme
Sear the meat well on all sides, place it on a rack tray and spread a third of the sauce on top of the meat. Roast in a preheated oven, fan on 375F/190C for 8-9 minutes. After that time take the roast out and spread half of the remaining sauce on top and roast again for 8-9 minutes. Again, after that time take the roast out and spread all that is left from the sauce on top. Turn off the oven fan, stick a thermometer in the middle of the roast, set to your desired doneness, mine was set to 133F/56C and put the roast back in the oven. You can cover the roast with cooking foil, when you like the color of the crust and continue cooking until it reaches the desired internal temp. If you want the meat more red, set the thermometer to 129F/54C, if you want it more done set it to 136,5F/58C.
