Classic Fettuccine Alfredo (From Scratch)
Ingredients
1 lb fresh fettuccine pasta (or dried, if preferred)
1 bulb garlic (about 10 cloves), finely minced
2 tablespoons unsalted butter
2 oz dry white wine
2 cups heavy cream
¼ cup grated Parmigiano-Reggiano, plus more for garnish
Kosher salt, to taste
Freshly cracked black pepper, to taste
Instructions
Bring a large pot of well-salted water to a rolling boil and cook the pasta until just tender. Fresh pasta will only take a few minutes. Do not rinse. Reserve pasta water if needed.
Start the sauce.
Heat a pan over medium heat and add the butter. Once melted, add the minced garlic and sauté gently until just beginning to turn lightly golden. Do not burn the garlic.
Deglaze the pan.
Add the white wine and let it sizzle, scraping up any flavorful bits from the bottom of the pan. Reduce until the wine is almost completely evaporated.
Add the cream.
Pour in the heavy cream and reduce over medium heat, stirring occasionally. Stay close—cream can boil over quickly. Season lightly with kosher salt and freshly cracked black pepper.
Finish with cheese.
Once the sauce begins to thicken, remove the pan from the heat and stir in the grated Parmigiano-Reggiano. Return to low heat if needed and continue reducing gently until the sauce reaches your desired consistency.
Combine with pasta.
Transfer the cooked pasta directly into the pan with the sauce. Toss to coat evenly, allowing the pasta to absorb the sauce and flavors.
Plate and garnish.
Use tongs to create height when plating. Finish with additional grated Parmigiano-Reggiano and serve immediately.

Keep the heat gentle—Alfredo is about control, not rushing.
