Ingredients:
Tomatillos
Serranos
Jalapeños
Poblanos
Onion
Garlic
Cilantro
Thyme
Bay leaves
Oregano
Cumin
Salt
Pepper
Onion powder
Garlic powder
Cayenne
Instructions:
Start by cleaning all of the chickens, then add them to a pot of water. Add a whole onion and 4 to 6 garlic cloves. Let that boil for about 20 minutes or until cooked through.
While the chicken is cooking, go ahead and peel the tomatillos and wash them, as well as the serranos, jalapeños, poblano, and cilantro. Let the poblanos dry then roast them over the fire until the skin is completely charred. Lay your tomatillos out on a cooking sheet drizzle them with olive oil and put them in the oven at 450° until the tomatillos are soft and tender. Once the tomatillos are done put them in the blender. Roast your peppers, onions, and garlic. Add that to the blender and blend- that’ll be the sauce of the soup. To reduce the acidity from the tomatillos you can simmer the sauce and add in your seasonings. I used salt, pepper, cumin, garlic powder, and onion powder.
Once your chicken is cooked, take it out and let it cool off before you shred it. You can use the water in which the chicken is cooked or use a fresh chicken stock. Your choice!!! Add the green sauce to the water stir around for a bit and then taste test! Add what you think is needed based on preference. Add the harmony and let the water simmer as you’re shredding the chicken. Once the chicken is shredded, go ahead and add that to your soup. Mix it all and add in some bay leaves, oregano, and thyme. Give it a good stir and taste test once more to see what you need. If you want it spicier you can add in cayenne. If you like it the way it is you’re perfect and ready to serve!!! You are welcome to add cabbage, radish, onion, sour cream, and/or lemon. Enjoy!
