RECIPES IN VIDEO:
Tofu Crumbles
Ingredients
1 × 280g extra-firm tofu
15ml olive oil
15ml light soy sauce or tamari
15 ml dark soy sauce
1 tsp Marmite or red miso
1 tbsp nutritional yeast
½ tsp garlic granules
1 tbsp tomato purée
Method
Preheat the oven to 180°C (340°F).
In a large bowl all the ingredients except for the tofu and whisk to combine.
Finely crumble the tofu into the flavourings and toss to coat.
Optionally leave to marinate for 30 minutes or for best results 12 hours.
Spread out onto a lined baking tray and bake for 30-45 minutes or until crispy and chewy.
Alternatively, air-fry at 180°C (340°F). for 15-20 minutes or pan fry for a similar time over a medium heat.
If using as taco crumbles or not rehydrating, cook for 5-10 minutes less so that it retains some moisture.
Simmered Tofu
Ingredients
1 x 300g firm tofu
1l water
1 tbsp fine salt
Optional extras to add to the simmering liquid
Soy sauce
Aromatics such as onion, garlic, bay leaves, rosemary, and whole spices.
Vinegars or citrus juice
Vegetable stock cube or plant-based meat flavoured stock cubes
Method
Cube or slice your tofu.
Bring the water and salt to a boil and add your tofu.
Add aromatics if using.
Simmer for 5 minutes then drain and leave to steam dry.
Alternatively boil the water, whisk in the salt and pour over the tofu in a heatproof dish.
Leave to sit for 10-15 minutes then remove and leave to steam dry.
After 10 minutes of drying pat dry using a tea towel or kitchen roll.
Whole roasted tofu block
Ingredients
1 × 300g firm tofu
1 tbsp vegan yoghurt or vegan mayonnaise
2-3 tbsp dry seasoning of your choice
Method
Preheat the oven to 180°C (340°F).
Press the tofu in a tea towel to remove some of the water but mostly just to get the outside dry.
Spread yoghurt or mayo thinly over all sides.
Apply the seasonings to all sides of the tofu.
Roast for 40-50 minutes turning halfway through.
Alternative air-fry at 170°C (340°F) for 30-35 minutes, flipping after 15 minutes, golden with a juicy centre.
Whole roasted tofu block creamy topping
(Add after tofu has roasted for 15–20 minutes)
Herby Mayo Crust
Ingredients
50g vegan mayo or thick vegan yoghurt
1 medium clove garlic, zested
2 tbsp chopped fresh herbs (mint, parsley, chives, etc.)
Zest of ½ a lemon
1 tsp nutritional yeast
Method
Spread thickly over the top of the tofu only.
Return to the oven for 10-15 minutes until golden.
