This easy Thai salmon salad is fresh, spicy and delicious. It's eaten best as soon as it is dressed.
Serves 2
Shopping List:
Salmon, Shallots, Green Apple, Cucumber, Cherry Tomato, Spring Onion, Coriander, Mint,Cashew Nuts, Rice, Chilli Flakes (Optional), Fresh Chilli, Garlic, Palm Sugar, Fish sauce, Lime
Recipe
Dressing:
2 Fresh Chillis
1 Garlic Clove
15g (0.53oz) Palm Sugar
3tbsp Fish sauce
1/2 Lime (Juice)
Pound the chilli & garlic to a rough paste using a pestle & mortar
Add palm sugar, fish sauce & lime juice.
Salad:
280g (10oz) Fresh Salmon
2 Shallots
1/2 Green Apple
1/2 Cucumber
1/2 punnet Cherry Tomato (around 12)
1 Spring Onion
1/2 bunch Coriander Leaves
1/2 bunch Mint Leaves
10g (0.35oz) Cashew Nuts
10g (0.35oz) Raw Rice (only use 1 tsp, keep the leftover for next time)
Chilli flakes (Optional)
vegetable oil
Roast raw rice in a pan on medium heat using no oil. Ground it in a pestle & mortar.
Season the salmon with salt and place skin down in a hot pan using vegetable oil. Cook 4 to 5 min on each side on low heat.
Place all the vegetables in a large bowl and add the flaked, cooked salmon. Add the dressing and toss gently. Garnish with apples, chilli flakes (optional), roasted Rice powder & Cashew Nuts.
