No yeast cake donuts recipe
3 1/2 c. flour
1 tsp. baking soda
2 tsp. baking powder
1/2 tsp. salt
2/3 c. sugar
1/2 tsp. nutmeg
1 tblspn yogurt (or buttermilk)
4 tblspn. butter
1/2 c. milk
1 tsp. vanilla
Cream butter and sugar; add vanilla, yogurt, milk
Mix.
In separate bowl, add flour, salt, nutmeg, baking powder and baking soda.
Sift all ingredients.
Then slowly add flour mixture to wet ingredients. Combine just enough that dough begins to come together.
Dough may be a little sticky.
Lightly dust counter with flour, empty your dough onto floured surface. Press dough down and fold over 3 or 4 times for smoothness. Don't overwork the dough or it will become tough.
Press dough down to about 1/2" thickness. Dust with a little flour. Rest dough for 5-10 minutes.
While dough rests, heat the ghee for frying. Use donut cutter (or substitute) to cut out the donuts. Save holes to fry later.
Again, press scapes and continue cutting donuts.
Note: you should get 10-12 donuts depending on size of cutter.
Glace for donuts:
4 cups icing sugar
milk or water
(Add small amounts at a time and stir to desired thickness to cover donut)
Then dip one side donuts into the mixture after letting donuts cool.
For variation, fresh lemon juice may be added to sugar instead of milk.
