Yucca flowers are dramatic - and delicious when they are deep fried. Here's how to choose the right flowers to deep fry, how to get the bitter saponins out, how to deep dry the flowers, and two kinds of dipping sauce that make the deep fried flowers even better!

Some kinds of yucca flowers have more saponin in them, and some kinds have less. Saponins are like detergent or soap and can be bitter. They make my throat itch, too. But once I take out the saponin, they are really good food! This video shows one way to take out the saponin, but still leave the flowers crispy and firm -- perfect for deep frying!
There are many species of plants in the genus Yucca, in the Asparagus family. They have many common names, and some species get called the same common name. So I include the scientific name here, too. The two yucca species I show in this video are:
Yucca flaccida, alWeak leaf yucca or Adam's needle
Yucca gloriosa, Moundlily yucca, Adam's needle, or Spanish dagger
