制作步骤(500克菠萝肉)
1. 预处理菠萝
将菠萝去头去尾,去除黑色孔眼
取500克净果肉切成适口小块
放入大碗中,加1克盐和20克白糖翻拌均匀
覆保鲜膜腌渍1小时,待自然渗出果汁
2. 制作果泥
将腌好的菠萝连汁倒入料理机
无需加水,直接打成保留纤维的果泥
(喜欢果粒口感可保留1/4菠萝切丁不搅打)
3. 熬煮浓缩
果泥入锅大火煮沸后转小火
加入20克白糖,保持微沸状态熬煮15分钟
期间每2分钟搅拌一次防粘底
待粘稠度接近蜂蜜时,加10克蜂蜜/麦芽糖
最后煮1分钟即可关火
4. 装瓶保存

Recipe (500g pineapple flesh)
1. Prep the Pineapple
Trim ends, remove black eyes
Cut 500g cleaned flesh into bite-sized chunks
Toss with 1g salt + 20g sugar in a bowl
Cover and marinate 1 hour (juices will release naturally)
2. Blend the Puree
Transfer pineapple (with juices) to a blender
Blend into a fiber-rich puree (no water needed)
Optional: Keep 1/4 of pineapple as diced chunks for texture
3. Cook Down
Simmer puree on high heat → low boil
Add 20g sugar, stir every 2 minutes to prevent sticking
After 15 mins (honey-like thickness), add 10g honey/maltose
Cook 1 final minute, then turn off heat
4. Jar & Store
Pour hot jam into sterilized jars, seal immediately
