[Hup Toh Soh 核桃酥] The Chinese walnut cookies that contains actual walnuts 真・合桃酥

Walnut Cookies (Hup Toh Soh) is a traditional Hong Kong-style sweet treat at Chinese pastry stores. This Hong Kong-style Walnut Cookie is sweet, crumbly, crunchy with beautiful nutty flavour! Walnut contains high concentration of DHA, a type of Omega-3 fatty acid, which helps to improve brain health and prevent cardiovascular diseases. In Cantonese, Hup Toh means walnuts and Soh means pastries. Surprisingly, Hup Toh Soh does not contain walnuts at all! Therefore, I recreated homemade Walnut Cookies that actually contain walnuts in them and are even more delicious! Also, I made these cookies in bite-sized pieces so you can just pop the whole cookie in your mouth, making them perfect for afternoon snacks. While most walnut cookies recipes use butter or lard, this vegan recipe is so simple, uses coconut oil, requires no electric mixer, you can simply mix everything by hand, shape them and they are ready to go into the oven!
桃酥 （核桃酥或合桃酥）可算是港式唐餅當中的經典傳統手工小吃。桃酥歷史悠久，相傳早在唐朝，桃酥有寓意夫妻和合的好意頭。 港式合桃酥，金黃鬆脆，充滿堅果香！擁有如大腦一樣紋理的合桃一直被譽爲是「補腦食物」， 含有豐富的抗氧化物DHA，抗衰老益心臟。但同菠蘿包沒有菠蘿一樣，合桃酥也不一定有合桃！名為合桃酥只是因酥餅表面的裂縫看起來像核桃殼。因此， 我決定試做了有合桃的合桃酥，而且做成一口一塊的大小， 非常適合下午茶點！這家庭版本食譜非常簡單易上手，無繁瑣的步驟，無需電動打蛋器、無牛油、無臭粉、無豬油、無阿摩尼亞，有興趣的不妨試做吧！

1/4 cup Coconut Oil椰子油1/4 杯
3 Tbs Sugar 糖3湯匙
1/4 tsp Salt 鹽1/4 茶匙
4 Tbs Grounded Walnut/Almond 磨碎合桃/杏仁4湯匙
1 cup minus 2 Tbs All Purpose Flour 中筋麵粉1 杯減 2 湯匙
2 Tbs Cornstarch 粟粉2湯匙
1 tsp Baking Powder 泡打粉1茶匙
1 Egg 雞蛋1集
