Koki is a Sindhi breakfast. It is a very healthy recipe as it has wheat flour. It turns out nice and crispy. Koki looks nice and tastes simply delicious. It is a very easy and simple recipe. It doesn’t need lot many ingredients. You can make it from very few ingredients those are easily available in your pantry. You can try this recipe at home and drop a comment for me. Ingredients:
• 2 cups Wheat flour
• 2 tbsp Besan
• 1 tsp Red chili powder
• Salt to taste
• 1/2 tsp Turmeric powder
• 1/4 tsp Ajwain / Carom seeds
• 1 tsp Green chili paste
• Finely chopped Coriander leaves
• 1 finely chopped Onion
• Water
• Ghee
Method:
• Mix wheat flour, besan, red chili powder, salt, turmeric powder, ajwain, coriander leaves, onion
well together and add a little water at a time to knead stiff dough.
• Make small balls from the dough and dip it in dry flour.
• Roll a little thick roti like paratha from it.
• You can cut off the edges of the roti with the help of a lid.
• Heat up a pan on medium heat and transfer the koki on it.
• After roasting koki for about 1 1/2-2 minutes from lower side flip it over and roast well from
other side too.
• Spread ghee on upper side and flip the koki over.
• Again spread ghee on this side and roast well from both sides.
• When koki is roasted well from both sides, take it off on a jali.
• Koki is all ready.
• You can serve it as breakfast or it can be a good lunch box option for kids.
• You can add finely chopped green vegetable to make it healthier.
• You can make 6 kokis from 2 cups wheat flour.
