Roasted Garlic and Pumpkin Soup Recipe
serves 2-3 people
1 small pumpkin
4-6 cloves garlic
1 tsp salt
1/4 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp sage
1/8 tsp cayenne pepper
sour cream and parsley to garnish
1. cut open the pumpkin and scrape out the seeds
2. cut pumpkin into quarters
3. drizzle olive and a pinch of salt on the flesh side of each pumpkin quarter then place facedown on baking tray
4. scatter place unpeeled garlic cloves in tray
5. Roast the pumpkin and garlic at 450 degrees Fahrenheit for 45 -50 minutes until pumpkin is fork tender. remove garlic from the tray at 30 minutes.
6. Remove the pumpkin from over and peel off the skin. remove skin from garlic as well.
7. place roasted garlic and roasted pumpkin flesh into a heat safe blender . add 1/4 cup of water and blend. add more water if necessary til u reach desired soup consistency.
8. transfer soup mixture into a sauce pan and cook on medium low heat until desired temp.
9. combine spices and seasonings and stir into soup.
10. If desired, serve with a swirl of sour cream and garnish with parsley.
