Rakhi hamper session -2 Baklava cookies, khajur biscuit bites, spicy flavoured nuts
🌸 Baklava Cookies 🌸
Ingredients:
Milk – 7.5 ml (½ tbsp)

Soft butter – 50 g

Saffron threads – 15

Khoya – 3 tbsp (60 g)

Maida (all-purpose flour) – 100 g

Cornflour – 10 g

Powdered sugar – 50 g

Baking soda – ¼ tsp

Cardamom powder – ½ tsp

Pista – 3 tbsp

Almonds – 3 tbsp

Method:
Take a bowl and add butter, powdered sugar, and khoya.

Beat well until the mixture becomes light and fluffy.

Soak saffron in milk and add to the mixture along with cardamom powder. Mix again.

Sift together maida, cornflour, and baking soda.

Add the sifted dry ingredients into the mixture and gently combine using a light hand to form a dough.

Shape the dough into 12 -13 cookies.

Preheat the oven to 160°C.

Bake the cookies for about 15 minutes, then check. Continue baking for up to 20 minutes or until the tops turn lightly golden.

Let the cookies cool completely, then store in an airtight container.

Khajur Biscuit Bites Recipeखजूर बिस्किट बाइट्स रेसिपी
Ingredients:
250 gm seedless khajur (dates)
20 gm ghee (for roasting khajur and nut powders)
20 gm kaju powder (cashew powder)
20 gm pista powder (pistachio powder)
20 gm badam powder (almond powder)
1/2 tbsp cocoa powder
18 Marigold biscuits (for layering)
👇Method:
👉Prepare the Khajur Mixture:
Finely chop or blend the seedless khajur into a coarse paste.
👉Roast Ingredients:
Heat ghee in a pan.
Add the khajur paste and roast on low flame until it softens and turns aromatic.
Add kaju powder, pista powder, and badam powder. Mix well and roast the mixture for 2-3 minutes.
Finally, add the cocoa powder and combine thoroughly. Set aside to cool slightly.
👉Layer with Biscuits:
Take a flat dish or tray and line the bottom with Marigold biscuits.
Spread a layer of the khajur mixture evenly over the biscuits.
👉Repeat the Layers (Optional):
Add another layer of biscuits on top of the khajur mixture.
Spread another layer of the khajur mixture for extra richness.
👉Set and Serve:
Press gently to ensure the layers stick together.
Let it set in the fridge for 1-2 hours.
Once firm, cut into bite-sized squares or rectangles.
Serve your Khajur Biscuit Bites as a delightful and healthy treat!

🌶️ Spicy Masala Mix Nuts
Ingredients:
¼ cup kaju (cashews)

¼ cup badam (almonds)

Total nuts: ½ cup

1-2 tsp ghee

½ tsp kasuri methi (crushed)

½ tsp chaat masala

½ tsp cumin powder

½ tsp black pepper powder

½ tsp red chilli powder

½ tsp pink salt (or regular salt)

½ tsp cinnamon powder

½ tsp ginger powder

½ tsp garam masala

⅛ tsp hing (asafoetida)

½ tsp amchur (dry mango powder)

✅ Method:
Warm the ghee:
Heat 1-2 tsp ghee in a pan on low flame.

Add the nuts:
Add ¼ cup kaju and ¼ cup badam. Toss gently so the ghee coats all the nuts.

Add all the spices:
Reduce heat to very low and add:

½ tsp kasuri methi

½ tsp chaat masala

½ tsp cumin powder

½ tsp black pepper powder

½ tsp red chilli powder

½ tsp pink salt

½ tsp cinnamon powder

½ tsp ginger powder

½ tsp garam masala

⅛ tsp hing

½ tsp amchur powder

Mix gently:
Stir well for 1–2 minutes until the nuts are evenly coated and the masala is lightly roasted.

Cool & store:
Let the mix nuts cool completely, then store in an airtight container.

✨ Tip: Tastes great with evening tea, can be packed in snack boxes, or used as a party starter!
