It's "cheat" puff pastry because I'm not using a slab of butter when laminating the dough. Grated butter is the way to go though. Just bust out the rhymes.

Cheat Puff Pastry
250 g all-purpose flour (approx. 1.75 cup)
5 g fine salt (1 tsp)
227 g butter (1 cup)
150 ml ice cold water (2/3 c)
15 ml lemon juice (1 Tbsp)
