Baking + Q&A with my Little Sister

The recipe for banh bo nuong is straight from my sister's notes! 😊

INGREDIENTS
2 cups tapioca starch (265g)
1/4 cup rice flour (34g)
1 tbsp *double-acting* baking powder (15g)
14 fl oz coconut milk
1 1/4 cups sugar (260g)
1 tsp salt (6g)
1 tsp pandan extract (6g)
6 eggs (300g)
2 tbsp melted coconut oil (26g)

INSTRUCTIONS
1) Preheat the oven to 350°F and place the Bundt pan inside.
2) Over heat, combine coconut milk, sugar and salt until the sugar is dissolved. *Do NOT boil.*
3) Add pandan extract and whisk well.
4) Set the mixture aside to cool (place in the refrigerator if needed to cool faster).
5) In another bowl, combine tapioca starch, rice flour and baking powder. Mix well.
6) In a separate bowl, crack in the eggs.
7) Gently break the yolks. *DO NOT BEAT THE EGGS.* (I quite literally grab scissors, cut the egg yolks and *gently* mix with a fork until barely combined.) *Beating the eggs will aerate the batter and cause it to fall/deflate!* This is the hardest part.
8) Combine the coconut-pandan mixture with the eggs and gently mix.
9) Slowly add the dry ingredients into the egg mixture and mix gently. (**It will be SUPER chunky and that's okay!** Combine the mixture but *do not aerate* the batter.)
10) Using a strainer, run the batter into a separate bowl and break down chunks using a spatula or spoon. (**At this point, your batter should combine nicely—strain it multiple times if needed!** This is the most time-consuming part. **You want to make sure there are no chunks in your batter!**)
11) Once well-strained, add the melted coconut oil and mix gently. (**Again, do not aerate the batter.**)
12) By now, your oven should be heated to 350°F and your Bundt pan should be hot. Carefully spray the Bundt pan with oil.
13) Carefully pour the batter into the pan and bake for 45 minutes.
14) After 45 minutes, turn the oven off.
15) Let the Bundt pan sit in the oven for 20 minutes with the oven door slightly open.
16) After 20 minutes, remove from the pan and serve.
