Ingredients
2 cups plain flour
1 tsp ground cinnamon
1 tsp baking soda
¼ tsp salt
2 ripe bananas
2 eggs
¾ cup sugar
½ cup melted butter
⅓ cup milk or plain yogurt or sour milk
1 tsp vanilla extract
Optional toppings: raisins, coconut flakes
Instructions
Prepare dry ingredients
In a bowl, place a sifter or strainer.
Add flour, cinnamon, baking soda, and salt.
Sift and mix well.
Set aside.
Prepare wet ingredients
In another bowl, mash the bananas.
Add eggs and sugar, and mix well.
Stir in melted butter, milk, and vanilla extract.
Mix until combine.
Combine
Gradually add the dry ingredients into the wet mixture, stirring gently until just combined.
Don’t overmix — a few small lumps are fine.
Prepare to bake
Grease your baking tin (or line it with parchment paper).
Pour in the batter.
Sprinkle raisins and coconut flakes on top (optional)
Bake
Bake in a preheated oven at 180°C (350°F) for about 45–55 minutes, or until a toothpick inserted into the center comes out clean.
