1 1/2 quarts prepared rinds
( thinly slice, small pieces, or 1” chunks )
4 cups sugar
1/4 tsp ginger ( powder )
1/4 cup water
1/4 cup lemon juice - pure bottled
•Cover rinds with sugar - allow to sit in fridge overnight up to 24 hours
•Set rinds and sugar in none reactive pot
•Allow to come to a boil and add the ginger powder
•Add the 1/4 cups water, bring back to a boil and dial stove eye down to a consistent simmer
•Simmer for 1 hour stirring occasionally
•Add lemon juice and continue to simmer 30 minutes , after 30 minutes
•This is the time to blend to your texture.
•Continue to simmer and reduced down, till you reach the thickness you like - may take up to 3 hours
Memo - it will set up more after water bath
•Waterbath for 20 minutes.
