Multi-Stage Freeze-drying Process by Phase and State Diagrams: Part A

In this video, I am explaining the freeze-drying process and its operation based on state diagram of banana and phase diagram of ice. First, the state diagram of banana is presented by identifying freezing curve, glass line, and ultimate maximal-freeze-concentration conditions. Second, the freeze-drying paths are presented on the state diagram. Third, different components of the phase diagram of ice are presented by explaining the triple point, water-vapor line, ice-water line and ice-vapor line. Finally, three scenarios of freeze-drying conditions are considered and explained how to achieve sublimation in the case of freeze-drying initial stage. In the next video, I will explain the multi-stage freeze-drying process using phase diagram of ice and state diagram of banana.
