Anzac Biscuits Recipe
Makes 20 cookies
Ingredients:
125g all purpose flour
80g desiccated coconut
90g rolled oats
200g brown sugar
1/2 tsp salt
115g unsalted butter
2 tbsp golden syrup
2 tbsp water
1tsp baking soda
1. Pre heat fan forced oven to 140C (Sorry the video says 150C)
2. Line 3 baking trays with parchment paper
3. Add flour, coconut, salt, oats & brown sugar to a large bowl
4. Use a spatula to mix everything together until combined. Set aside
5. Add butter, golden syrup & water to a small saucepan
6. Set over medium heat
7. Use a spatula to stir occasionally until the butter is fully melted. Be careful to not burn the butter
8. Remove the saucepan from the heat and immediately add baking soda
9. Use spatula to stir the mixture together until combine. The mixture should froth up
10. Transfer to a the bowl with dry ingredients
11. Mix everything together until combined
12. Use a small cookie scoop or table spoon to roll out 6 balls per baking tray
13. Bake for 12-14 minutes until the cookies are golden
14. Let the cookies rest on the tray for 5 minutes before transferring to a cooling rack
& enjoy!!
Note:
These cookies will keep stored in an air tight container for about 2 weeks
The video says 150C. So sorry!! Bake at 140C NOT 150C
