🌴Ingredients

5 chicken quarters

2 Tbsp fresh thyme
2 stalk scallions
1/2 onion
1 1/2 Tbsp pimento seed/all spice
1/2 scotch bonnets pepper
1/4 cup wet jerk marinate

🌼Seasoning
1 Tsp jerk powder season
1 Tsp smoked paprika
1 Tsp garlic powder
1 Tsp onion powder
1 Tsp all purpose season

2 Tbsp Olive Oil
1 Tbsp ketchup
2 Tsp browning or dark soya
1 Tsp white vinegar
1 Tbsp fresh ginger
1 Tbsp brown sugar

🌼Sauce
1 cup ketchup
3 to 4 Tbsp honey
1 Tbsp dark soya
2 Tbsp brown sugar
1 1/2 Tbsp white vinegar
2 Tbsp Chilli/flakes seed
1/4 cup Jamaican red stripes beer/optional
1/2 Tsp wet jerk marinate

Cooked for 1 hour in total on 180 degrees Celsius or 400 degrees
