花生酥糖做法 - 廣州街頭美食/peanut Brittle Candy - Chinese street food.

Brittle is a type of confection consisting of flat broken pieces of hard sugar candy embedded with nuts such as pecans, almonds, or peanuts.It has many variations around the world, such as pasteli in Greece,croquant in France, gozinaki in Georgia, gachak in Indian Punjab, chikki in other parts of India, kotkoti in Bangladesh[citation needed] , Huasheng tang(花生糖) in China , Thua Tat ( ถั่วตัด) in Thailand and kẹo lạc in Vietnam. In parts of the Middle East, brittle is made with pistachios, while many Asian countries use sesame seeds and peanuts.Peanut brittle is the most popular brittle recipe in the US.The term brittle first appears in print in 1892, though the candy itself has been around for much longer.

花生糖小吃是一種糖果,在中國、西歐和美國都甚為常見,花生糖是將花生、麥芽糖、砂糖混合加熱至濃稠狀態,冷卻凝固後切成小塊所制成。早期的花生糖的主材料與作法極為單純,近年來已衍生多種制作方法,例如花生軟糖、花生酥糖;或添加各種副材料以創造多變化的口味,例如芝麻花生糖等。另有以杏仁、核桃、南瓜子等幹果取代花生,即各自稱呼為杏仁糖、核桃糖、南瓜子糖等。
在香港,以九龍城區潮汕餅食店的花生最為標準,馳名東亞。

花生酥糖的做法步驟:
1、準備好材料:花生仁、麥芽糖、少許芝麻
2、花生仁先入預熱好,去掉花生皮,然後用搟面杖稍搟碎
3、不粘鍋中放入麥芽糖,加水先用小火煮開。
4、煮至粘稠狀,麥芽糖拉出絲並脆了,就可以了。
5、將溫熱的花生碎放入熬好的麥芽糖漿中快速拌勻,讓每粒花生都沾上糖漿。
6、板上撒上少許芝麻,然後把花生糖倒入不粘的平板上,用力壓平,壓實。
7、稍涼後,脫模,然後先切成長條,再把切成條的花生酥切成小段。
8、花生與麥芽糖最完美的結合,咬上一口滿口生香,讓人停不下口。
註:糖漿的熬制關系到糖的軟硬,太硬切的時候會碎,而且切不動,太軟會粘手,所以一定要控制好。
