Mud Crab Foraging in Mangroves | Coconut Chilli Crab Cook Up

Join Rohan and Mat, as they hunt through the mangroves of the north west in search of Giant Mud Crabs.

Armed with round bar crab hooks, reef boots, and as much lighting as they can carry, it's game-on into the night, Man VS Crab.

Mat was kind enough to give the lions share of the crabs caught to Rohan, so that he could cook up his signature Coconut Chilli Mud Crab to share with his beloved Eden and film for the viewers at home.

The recipe is as follows in the video:

Ingredients:

2-4 cleaned and cracked Giant or Brown Mud Crabs (Blue Swimmers work great too in larger quantities).
1-2 fresh chillies, finely chopped (as hot as you like).
2-3 cloves of Garlic, finely chopped.
1 bunch of finely chopped spring onions.
2 400gm cans of diced tomato's.
1 400ml can of coconut cream/or milk.
A dash of olive oil.
A splash of fish sauce.
Fresh buttered bread for dipping.

Method:

Heat large cooking pot over stove top on high heat.
Add a dash of olive oil.
Add cleaned crabs to pot, with chilli, garlic, and fish sauce.
Place lid on pot and allow to heat thoroughly for 5-10 minutes or until crabs begin to turn red.
Add spring onions and cook until crabs are red and confirmed cooked through.
Add canned tomato's and coconut cream, stir, place lid on pot and allow to simmer and steam for another 5 minutes to infuse the flavours.
Take crabs off heat and serve into a large dish or wok, removing the crabs from the pot first, and then pouring the sauces on top allowing the heat and sauce to rotate throughout the dish.
Serve with fresh buttered bread, get messy, and enjoy.
Any left over sauce and juices can be poured over pasta or rice to make a secondary dish and tastes absolutely delicious with the crab flavours.
