Graham Crackers Recipe (makes 24 crackers for 12 S'mores)
1 1/2 cup whole-wheat flour (I used pastry flour)
1 1/4 cup graham flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
3/4 cup (1 1/2 stick unsalted butter), cubed
1/3 cup granulated sugar (white sugar)
1/4 cup brown sugar
1/4 cup honey
1 teaspoon vanilla extract
1 large egg

S'mores Ingredients
6 milk chocolate bars, 1.5 ounce each (we use Hershey's brand in the U.S.)
2 cups mini marshmallows
1 1/2 cups milk chocolate chips

Graham Crackers & S'mores
1. Make the graham crackers: Combine the flours, salt, baking soda and cinnamon in a medium bowl; set aside.
2. Beat the butter and sugars with an electric mixer until fluffy.
Add honey, vanilla, and egg. Beat until combined.
3. Gradually add the flour mixture and stir until it is incorporated. Wrap the dough in plastic wrap and refrigerate for 45 minutes.
4. Preheat the oven to 350 degrees F. Butter 2 cookie sheets (I used parchment paper instead).
5. Roll the dough out to a rectangle 1/4 inch thick on a floured work surface.
6. Measure and mark 3-inch squares. Cut with a pastry cutter. Place the squares on the cookie sheets 2 inches apart. Prick pattern dots with a fork.
7. Bake for 10 to 12 minutes, until lightly browned. Let cool on the pans for 5 minutes. Transfer to a wire rack to cool further.
8. Make the S'mores: Preheat the oven on broil.
9. Arrange half of the graham crackers on a cookie sheet. Top each with 1/2 chocolate bar.
10. Arrange 2 to 3 tablespoons marshmallows on each cracker. Place the cookie sheet on the top rack and broil until lightly toasted. Keep a careful watch not to burn the cookies and marshmallow. This will take between 20 seconds to 2 minutes depending on your oven. Remove immediately. Top with remaining crackers and press together.
