💕 🍛 Bombay Biryani with Aloo (1 kg Meat) | Authentic Mumbai Style | No Fry Aloo | Kewra & Nutmeg Twist 🍛
✨ Full of flavor, fragrance, and that classic Bombay biryani punch! This recipe features tender meat, spiced boiled aloo, saffron-yogurt layers, and a rich masala. Perfect for 5–6 people.
🥩 Ingredients for Meat Marinade (1 kg chicken/mutton/beef):
1 cup yogurt
2 tbsp ginger-garlic paste
2 tsp red chili powder
1 tsp turmeric
2 tsp coriander powder
1 tsp cumin powder
1½ tsp garam masala
1½ tsp Bombay biryani masala (Shaan or homemade)
½ tsp nutmeg & mace powder
1 tsp crushed black pepper
Salt to taste
Juice of 1 lemon
2 green chilies (slit)
1 tbsp kewra water
Handful chopped mint & coriander
2 large onions – fried till golden (reserve some for layering)
🥔 For Spiced Boiled Potatoes:
3 medium potatoes (peeled, halved)
½ tsp turmeric
½ tsp red chili powder
Salt to taste
Pinch of orange or yellow food color
→ Boil until just fork-tender. Drain and set aside.
🍚 For Rice (750g Basmati):
Soak 30 mins, then boil with:
Salt (generous)
Whole spices: cardamom, cloves, bay leaf, cinnamon, star anise
→ Boil till 80% done, then drain.
🥣 For Yogurt Layer Mix:
½ cup yogurt
Pinch biryani masala
Salt
Saffron or yellow milk (¼ cup)
🔥 Steps:
Marinate Meat: Combine all marinade ingredients + fried onions. Rest 1 hr (or overnight).
Cook Meat: Cook marinated meat until tender and masala thickens. Add boiled potatoes and simmer for a few mins.
Layering:
Bottom: Half of the rice
Middle: Meat + potatoes
Drizzle: Yogurt mix, mint, coriander, fried onions
Top: Rest of rice + yogurt mix, kewra water, more garnish, 2 tbsp ghee
Dum (Steam):
Cover tightly, cook high 5 mins, then low for 25–30 mins.
Let rest 10 mins before opening.
🥗 Serve With:
Raita
Salad
Lemon wedges

💕Mango Dessert💕
1 pack ladyfingers biscuits
350 ml heavy cream
1/4 cup cream cheese ( optional)
3/4 cup powdered sugar ( or add condensed milk if you like)
1 tsp vanilla essence
4 mangoes sweet( 2 pureed-2 cubes)
Mix cream ,sugar ,essence,pureed mango together.
Layer it up with soaked ladyfingers and mango chunks.
