Whole Wheat Soaker:
• Whole Wheat Flour: 130g
• Water: 130g
Main Dough:
• Honey: 20g
• Yeast: 2g
• Water: 7g (to dissolve yeast)
• Bread Flour: 80g
• Salt: 2g
• Butter: 20g
Baking:
• Bake on the lower-middle rack at 280°F (138°C) for 40 minutes.
Tips:
1. This dough has a high hydration level. Adjust the liquid amount based on the flour’s absorption capacity.
2. Baking time and temperature are for reference; adjust as needed.
3. The poolish starter should be judged by its condition rather than time, as fermentation time may vary.
4. Once cooled, store the bread in a sealed bag to maintain its softness and moisture.
