New York Mutual Trading has started importing Miyazaki wagyu from Japan! A representative from the Miyachiku brand asked for a Japanese style single bevel yanagi to trim the beef but we insisted he try a Takamura knife. He was reluctant at first, saying that a sujihiki or slicing knife will not be good enough. But he was amazed at how sharp the Takamura sujihiki was.
