Here's a traditional vegan veggie stew recipe all the way from the south Indian cities of Palakkad and Tirunelveli. Molageshyam or Mulakushyam is a naturally vegan and gluten free soothing peppery stew that is the perfect dish for transitional seasons or as we go into the colder months. Enjoy it with steamed rice or paruppu saadam!

Ingredients:
1 medium-sized snake gourd deseeded and finely chopped into cubes (optional)
1 medium-sized eggplant finely chopped into cubes
1 medium-sized potato finely chopped into cubes
1/2 cup yellow moong dal
3/4 tsp turmeric powder
1 tsp black pepper powder
1 tsp sambar powder (sub with 1 tsp coriander seeds powder + 1/2 tsp black pepper powder)
10 - 12 curry leaves
Salt to taste
For the tempering:
1 Tbsp refined coconut oil
1 tsp mustard seeds
1 tsp cumin seeds
1 dry red chili
10 - 12 curry leaves
