Here's some footage of GTA 3 in a late beta stage (probably around August 2001), that was shown on Volume 12 of the PS World DVDs. Interestingly, this volume was released in December, after the final build of the game had been playable for two months.
I have uploaded footage of this before, but here it's in better quality, and also with the voice over removed, so you can hear the sounds of the game better. :)
Differences between this and the final build spotted:
Sentinel used for first mission
Able to blow off limbs
Beta car colours (including Felly Tours Coach)
Different sniper targeting
Stallion in different position in Don't Spank Ma Bitch Up
Differently coloured icons on map
Differently coloured car/location names
Different colours and screenshots on the intro
