ANANAS SHAKARKAND CHAAT

Ingredients

½ medium pineapple
2 tbsps oil
2 medium sweet potatoes, boiled, peeled and cut into 1 cm pieces
½ tsp red chilli powder
Salt to taste
2-3 tbsps fresh pomegranate pearls
2-3 tbsps chana jor garam
2-3 tbsps masala peanuts
¼ tsp yellow chilli powder
¾ tsp chaat masala
1 tsp roasted cumin powder
Black salt to taste
2-3 tbsps date and tamarind chutney
2-3 tbsps chopped fresh coriander leaves
Fresh coriander sprig for garnish

Method

1. Peel, discard the core and cut pineapple into 1 cm pieces.
2. Heat oil in a pan. Add sweet potatoes. Add red chilli powder, salt and sauté for 3-4 minutes.
3. Add pineapple in a bowl. Add pomegranate pearls, chana jor garam, masala peanuts, yellow chilli powder, chaat masala, roasted cumin powder and black salt and mix well.
4. Add date and tamarind chutney, sweet potato and coriander and mix with light hands.
5. Transfer in a serving bowl, garnish with coriander sprig and serve.
