Chicken Majboos (also called Machboos or Kabsa in some regions) is one of the most famous Arabian Gulf dishes, especially in Kuwait, Saudi Arabia, Bahrain, Qatar, and UAE. It’s a traditional rice dish cooked with meat (chicken, lamb, or fish), fragrant spices, and sometimes dried limes (loomi), giving it a unique Gulf flavors
Here’s a simple Chicken Majboos recipe for you:
📝 Ingredients (4–5 servings)
For the chicken & stock:
1 whole chicken (cut into 6–8 pieces)
2 medium onions (sliced)
4 cloves garlic (chopped)
2 tbsp vegetable oil or ghee
2 dried black limes (loomi) – pierced with a fork
2 medium tomatoes (chopped)
2 tbsp tomato paste
1 cinnamon stick
3–4 cardamom pods
3–4 cloves
2 bay leaves
1 tsp black peppercorns
1 tsp turmeric powder
1 tsp coriander powder
1 tsp cumin powder
1 tsp cinnamon powder
Salt to taste
5 cups water
For the rice:
3 cups basmati rice (washed & soaked 30 mins)
3 tbsp vegetable oil or ghee
1 onion (sliced)
1 carrot (grated)
1 green chili (optional, slit)
Handful of raisins (optional)
Fried nuts (almonds, cashews, pine nuts) for garnish
👩🍳 Method
Prepare the chicken stock:
Heat oil in a large pot, fry onions until golden.
Add garlic, whole spices, and chicken pieces. Sauté until lightly browned.
Add tomatoes, tomato paste, ground spices, and salt. Stir well.
Add pierced loomi and water. Cover and simmer 30–40 minutes until chicken is tender.
Remove chicken pieces, set aside. Strain stock if you prefer clear broth.
Prepare the rice:
In another pot, heat oil, sauté onion until golden.
Add grated carrot, chili, and raisins. Cook 2–3 mins.
Add soaked rice, stir gently.
Pour in enough chicken stock to cover rice (about 4½ cups).
Bring to boil, then reduce heat, cover tightly, and cook on low until rice is done (15–20 mins).
Final step:
While rice is cooking, you can roast or grill the chicken for extra flavor (optional).
Place rice on a big serving dish, arrange chicken on top.
Garnish with fried nuts and a sprinkle of chopped coriander.
✨ Serving suggestion:
Serve hot with fresh salad, yogurt sauce, or daqoos (a spicy Gulf tomato sauce).
