1. 发面团:中筋面粉500克、酵母5克、糖10克、水320克,混合揉成面团,醒发60分钟。
2. 菜肉馅:300克肉沫、25克姜末、50克葱碎、2大匙生抽、1大匙老抽、1大匙蚝油、1茶匙盐、2茶匙糖,搅拌均匀后加入2大匙食用油、1大匙香油,拌匀。200克左右的白菜丁备用。
3. 起油酥:中筋面粉200克、1茶匙盐、1茶匙十三香,160克食用油烧至200ºC左右,倒入面粉中,搅拌均匀成浓稠状。
4. 酥皮面剂子:将发面团擀成长方形,表面抹匀油酥,卷成长条,切成20个60克左右的面剂子。将面剂子切口处捏紧,封口朝上,以包包子的手法包成圆形,按扁备用
5. 包烧饼:这时将菜碎倒入肉馅中,搅拌均匀。去一个剂子,底面朝上擀成面皮,用包包子的手法包入肉馅,按扁备用。
6. 油煎烧饼:煎锅中倒入适量的油,放入烧饼,中小火煎至两面金黄
7. 烘烤烧饼:两面金黄的烧饼放入400ºF/205ºC的烤箱中,每面朝上各烤8分钟左右即可出炉。
