Mummy Dhokre Recipe:
The night before
Take two separate containers
2 cups rice - soak in 1 cup yogurt
Separate container
1 cup chane ki daal soak in 1 cup yogurt
Soar both of these for 1 hour
Now grind rice with Yogurt keep separate
Grind daal with yogurt (leave 1/4 cup daal separate don’t grind)
Now mix everything thing.
Use 1/2 cup water to clean grinder and put it in mixture.
Over night leave mixture outside cover with cloth.
In separate container - 1/2 cup red dried Mirchi, add 1/2 cup water.
Next morning
1.5 cups of course suji add to the mixture. Use hand to feel the mixture if needed add 1/2 to 1 cup of water -add 1.5 teaspoon of Huldi, add salt, 2 cubes of lusson Adruk, 2 spoons of chopped green chillies. Leave for 30mins for suji to expand.
Now take chutney mirchi from last night - add zeera, salt, oil 1/2 cup, lusson 2 cubes, dhunya 1/2 cup now grind it.
Use little water to rinse grinder jar from chutney residue and add to dhokre mix.
After 30mins you can check consistency of dhokre May need to add water. Add 1/2 cup oil. Stir.
This will make 5 Thali of dhokre ( use 6 big spantula’s for each thali) - add 1 Sache of fruit salt for each thali separately. Decorate with dhunya and mirchi.
Make sure water in pan is boiling hot and water is full in the pan.
Leave dhokre in Pan for 12 mins.
