How to make Ube Biko | Quick and Easy Recipe Ube Sticky Rice Cake

This ube biko is not overly sweet and just perfect to satisfy your cravings
Ingredients:
For cooking the rice
• 2 cups glutinous rice
• 1 cup water
Ube coconut cream:
1 can coconut milk (400ml)
¼ cup condensed milk
½ cup sugar
¼ teaspoon salt
1 teaspoon vanilla extract
1 teaspoon ube extract
2 tablespoon butter(optional)
¼ cup ube jam (optional)
Procedure:
1. Begin by rinsing 2 cups of glutinous rice under cold water until the water runs clear. Cook the rice in a rice cooker or pot with 1 cup of water until tender but not overly soft.
2. While the rice is cooking, prepare the ube coconut mixture. In a large pan over medium heat, combine 1 can of coconut milk, 3/4 cup of sugar, 1 teaspoon vanilla extract and ¼ cup condensed milk. Stir well and let the mixture simmer gently, stirring constantly to avoid burning, until slightly thickened — about 15 to 20 minutes.
3. Once the rice is cooked, add it to the pan with the ube coconut mixture. Mix thoroughly, cover and cook over low heat.
4. Prepare a lightly greased baking dish or tray, then transfer the ube biko mixture into it. Press it down evenly with a spatula.
5. Optional: Pour toasted coconut flakes. For a richer finish, pour an extra layer of latik (cooked coconut cream curds) or a mixture of coconut cream and sugar over the top and broil for a few minutes until lightly browned.
