Vegan Vanilla Cupcakes with Mango Curd | Gluten free

Soft and delicious gluten free vegan cupcakes filled with homemade mango curd and topped with vegan buttercream!
Cupcakes:
160gr Rice flour (1cup)
65gr cornstarch (1/2cup)
140gr sugar (3/4cup)
pinch of salt
1/2 tsp baking soda
1 tsp baking powder
300gr coconut milk (1 1/4cup)
120gr melted margarine (1/2cup)(or other plant base butter)
Vanilla extract
Vegan Buttercream:
112 margarine (1/2cup) (room temperateur)
380gr powdered sugar (2 1/2cup)
1 tbsp vanilla sugar
Mango Curd:
150gr ripe mango (5oz)
120gr coconut milk (1/2cup)
50gr sugar (1/4cup)
1 tbsp cornstarch
juice of 1 lemon
In a bowl mix dry ingredients and in other bowl mix wet ingredients of cupcakes. Combine dry and wet ingredients making a batter. When u make a batter, pour it in 12 cupcake liners. Bake in preheated oven on 175°C(350°F) for 20-25min.
To make a curd put all ingredients in bowl and mash it. Then put in blender and make it smooth. Pour in sauce pan and cook for a bit till gets thick. Leave on side to cool off.
When cupcakes are baked and cold, make a hole in middle and fill it with mango curd.
To make buttercream beat margarine untill creamy. Add vanilla sugar and powdered sugar. When done put on cupcakes with pipping bag.
Decorate and enjoy!!!
