HACCP has been in use since the 1960s, although it was only officially defined by the World
Health Organization’s Codex Alimentations Commission in the 1990s. Food businesses were
advised to implement a HACCP plan after an E. coli breakout in Scotland in 1996 and it became
mandatory from 1 st  January 2006 with the introduction of the Regulation (EC) No 852/2004 on
the hygiene of foodstuffs.
