In this video I sharpen a Shirogami Steel Nakiri with a Morihei Amakusa Japanese Natural Stone and a Tanaka Kyoto Tanba Aoto Japanese Natural Stone. I ended up at the paper cut test having a burr that needed removed, and over all I would say it needs MORE time on the stones to be a much better / cleaner edge, but I did this "faster" than usual and not nearly as long due to keeping the video under 2 hours. lol
The Amakusa I find is difficult to get an edge with, but I am able to achieve it here. I can tell you I do not usually use an Amakusa for setting a bevel or making an edge, but I was successful here just to prove I could do it. I would probably use a Binsui (if I recall correctly) as opposed to Amakusa.
I did have a technical issue with my GoPro, it overheated and I didn't realize it for several minutes, but I edited out some of the fiddling around and getting the video feed back.
