Do you love cake? Well, how about this brioche style chocolate strudel cake that tastes like cloud in your mouth and melts away... Make it with me using this step by step videorecipe.
This recipe makes 2x full size strudels and it will be gone by the end of the day. Trust me!
Recipe:
1st, make a starter for your dough. Warm up 250ml of milk, just warm, not hot! Add 10g of sugar and mix it till it disolves. Add 2x sachets of dry yeast 7g each (14g) and mix it. Set it aside and let it rise.
To make the dough, put 500g of plain flour into a bowl, add 1x whole egg and 1x egg white, pinch of salt, 60g of sugar and 45ml of oil. Add your bloomed yeast mixture and mix all well by hand or a mixer till nice and smooth. Leave it to rest at room temperature for at about 20 mins or untill double in size.
In a meanwhile, prepare your pudding. Measure 300ml of milk and separate some of it into a mug. Add 1x sachet of chocolate powder pudding (i'm using slovak brand from my country but uk sells them under angel delight for example) and mix it well. Place rest of the milk on medium heat and add 100g of sugar. Mix till it melts. Add your pudding mixture and stir well untill well combined and cooked into pudding. Add 125g of margarine or unsalted butter and mix it in. It will curdle up, dont worry, just put it back on fire and stir until it all combines well into a nice smooth pudding again. Leave it to cool a bit b4 using.
Once your dough is well risen, separate it into 4 equal parts and roll each one out into a rectangular shape. Part your pudding in 4 as well and spread each part of pudding on your dough piece. Fold it into a sausage shape like shown on my video. When you have all 4 sausages ready put 2 and 2 together and twist them into strudels. Rest them on baking paper for 10 mins to rise.
Now make an egg wash from 1x yolk and a splash of milk and brush your risen strudels.
Bake at 160 degrees fan function or 180 degrees electric oven top/bottom for 20 mins. They are ready when golden from the bottom as well as top.
Leave it to cool down b4 you cut it and Enjoy!
